Chicken Bar-B-Q



Picture above shows pieces of pan roasted chicken.Use a non stick pan, olive oil to grease the pan, toast some garlic to get a garlic infused oil and add the chicken pieces. Keep on turning them until they are cooked - at least 1/2 and hour over slow fire and keep covered with the lid.

1 chicken cut into 8-12 pieces
Marinate with
1 lemon ( grate the rind and squeeze the juice) Lemon rind, when used as an ingredient, refers to shavings of the thin yellow outer skin of the lemon.

2-3 teaspoon salt

1-2 teaspoon black pepper(grounded)

1 teaspoon cumin powder

1-2 teaspoon coriander powder

1 teaspoon fennel powder

1 tablespoon thyme (chopped) dried is ok

Combine marinade ingredients in heavy ziplock bag; mix.
Add chicken pieces and seal bag. Turn to coat with marinade, make sure the marinate covers the flesh below the skin; let stand in fridge overnight before bar-b-q...ing
